So basically it's a meatball sandwich in a casserole dish-- you take a bunch of meatballs with spaghetti sauce and cheese and put them in the middle of a casserole dish, and then take some garlic bread and put it around the outside of the dish so they keep the meatballs towards the center and bake. It looked so delicious in the photo, but sounded a little bland, so we added some zucchini, green pepper and onion to the pasta sauce, and instead of plain white French bread we used some cheesy jalapeno bread from our local Cobbs Bakery. And then we baked it all till the cheese was bubbly as directed.
It looked delicious when it came out of the oven. I forgot to take a picture of it before we started eating, but here's what was left of it:
We served it with a big caesar salad to help cover the veggie requirement of our dinner.
As delicious as it looked however, it was still BLAND. It was an incredibly boring meal that left us with no desire to make it again. My husband even offered to leave the leftovers for me for lunch, which is a clear indication that he wasn't a big fan either--I NEVER get the leftovers!
So all in all, I'm going to have to say that the Meatball Sandwich Casserole was a fail.
